Hump Day

It's hump day and we have a snow storm on our hands! It's nothing like a foot or anything fun like that- just a few inches to really be annoying and icy :( Anyway, my dinner last night was a big success- delicious!!!!!
Chicken Enchilada casserole:
3 chicken breasts cooked ( i shredded mine but you can cube it)
10 oz. can of enchilada sauce
1 can of black beans
1 can of southwest corn
1 can tomato sauce
1 cup onions
tortillas (6)
2 cups shredded cheddar

saute onions with dash of garlic in saucepan- add tomato sauce & enchilada sauce to a boil.
place two tortillas in the bottom of crockpot
put 1/3 cicken, 1/3 corn, 1/3 beans, 1/3 tomato sauce mixture, 1/3 cheese
continue this 2 more times- put crockpot on low for 6 hours and enjoy!!
