New things

So during Christmas, I was working 10-11 hour days and was making the same kinds of meals every week because they are easy and/or quick! After having a really busy Christmas schedule and not really being able to cook like I want to, I have decided to make at least one new meal per week! I really love cooking- my Mom is an amazing cook and has involved us with her cooking since we were little kids- always teaching us tips and tricks! We can't really afford for me to take cooking classes or anything, but I figured this is a fun way for me to do what I like and the family to get the benefits (hopefully if it's a good meal).

My favorite so far is probably the ribs that I made- mmmmmmmmmm!
I took a package of Beef Short Ribs and rubbed garlic and montreal steak seasoning on them and let them sit overnight covered.... then the next morning i plopped them in the crockpot with some BBQ sauce, FF/LS (fat free, low sodium) Chicken Broth, and a can of cream of mushroom soup. I set it on low all day- about 7 hours and we put it over rice with veggies.... YUMMOOOO!!

Tonight I'm making Chicken Enchilada casserole in the crockpot- I can't wait, it looked so good when i set it up! Crockpot recipes are my new best friend, especially since I work an hour away- it's nice to get home and have dinner done already!! I am always leary of crockpot recipes or casseroles because they are usually not very healthy, but I am selecting what I think are healthy and delicious!!

Michael and I also saw two good movies recently- our grocery store has a 'Red Box'- our new best friend! They are $1/day rentals and it's so easy to use. We saw Vantage Point and Pineapple Express- both good movies. Vantage Point was so riveting (i love that word, the experts always use it- and Tom Cruise uses it alllll the time which kind of annoys me) and exciting! Highly Recommended.
Pineapple Express was good too- it was definitely a stoner movie, but parts of it were very funny!! Has anyone seen previews for the movie 'Taken'?? It's about a former spy or something whose daughter gets taken- it looks really good!

We have been cooking too! HAHA-after months of not cooking it is great to get back in to the kitchen.
